Drain salmon and discard bones. Mash salmon.
Add egg and bread crumbs. Mix in peppers, onion, and herbs.
Blend until smooth. Add more breadcrumbs if necessary to shape into a bread-like loaf.
Place loaf on a parchment lined cookie sheed. Bake at 350 F for approximately 45 minutes until the top is firm and golden.
At this stage you can glaze it by brushing on some sweet chili sauce, or your favourite bbq sauce, and bake for an additonal 5 minutes.
Let the loaf cool, and then slice it up and serve with rice or your favourite vegetables. Also good served cold!
