Heat up the butter in large pot, with medium high heat.
Once all the butter is melted, add diced bacon, stir it occasionally.
Once the bacons are golden, add flour (one cup at a time), stir it, and then add water, making a roux.
Once it’s the thickness you want, add all the mirepoix and potatoes, cook it with medium low heat, and stir occasionally.
At the same time, add the Hondashi powder, and miso.
Once all the vegetable are being cooked add salmon, and lemon zest.
Turn off the stove, add the cream in, and stir it well.
